At Katami, we invite you to indulge in a journey through Japan’s seasonal flavors, carefully selected and crafted by Chef Manabu “Hori-san” Horiuchi. Our Omakase menu changes daily, honoring what’s fresh, available, and a mindful respect to sustainability. Choose from two unique paths: the Sushi Omakase, a delicate sequence of exquisite bites, or the Katami Omakase, a more expansive tasting incorporating both sushi and warm kitchen creations. Both are meant to capture an unforgettable experience — a perfect “katami,” or keepsake, to savor long after you leave.

This experience is more than a tasting menu; it’s the embodiment of his years of dedication, knowledge, and connection with his guests. Chef Manabu “Hori-san” Horiuchi
Chef Hori’s culinary journey began at the age of 16 in his native Japan, inspired by his mother’s skill and dedication in the kitchen. After graduating from Japan's prestigious Tsuji Culinary Institute, where graduated with top honors and completed his special certification to prepare fugu (blowfish), Chef Hori worked under Master Chef Mamoru Sugiyama at the renowned Sushi-Ko Honten in Tokyo. In 2000, he became the private chef to the Japanese Consul General in Houston, ultimately contributing to the rise of Kata Robata, named the top Houston restaurant in 2019.
A four-time James Beard Award nominee, Chef Hori has consistently been celebrated for his culinary mastery, passion, and innovation. In 2023, alongside his partners Ryan Synder and Yun Cheng, he created Katami, which quickly gained acclaim as #1 Best New Restaurant by Texas Monthly. Chef Hori-san’s career exemplifies a commitment to excellence, making Katami a reflection of his decades-long dedication to the art of Japanese cuisine.

The Sushi Omakase invites you into a thoughtfully curated selection of 17 seasonal offerings, showcasing the freshest fish from Toyosu Market and around the world. Each experience begins with a cold appetizer, transitions to sashimi, and flows into a procession of 14 pieces of nigiri sushi, ending with a delicate dessert. Designed to last approximately two hours, the Sushi Omakase adapts to your desired pace, ensuring an intimate meal in the hands of Chef Hori and his team.

A Dynamic Tasting of 20 Morsels
Starting at $275 per person
For those seeking a more immersive experience, the Katami Omakase balances a sushi tasting with intricate hot dishes crafted from our kitchen. This omakase features six savory dishes, twelve nigiri bites, and two desserts, all highlighting Chef Hori’s imagination and skill. Alongside sushi, enjoy a decadent wagyu course, a hallmark of premium Japanese cuisine. The Katami Omakase offers an intimate glimpse of Chef Hori-san’s culinary creativity and expertise — from exclusive dishes unavailable on our regular menu to rare seasonal ingredients, each course embodies a celebration of flavor and craftsmanship.
This experience typically takes approximately two and a half hours from the time the first dish is served, allowing guests to savor each course at a relaxed and thoughtful pace.
Omakase Details
An Exclusive Sushi Bar Experience
Our Omakase offerings are held exclusively at the sushi bar, Tuesday through Saturday, with limited seating. Positioned at the heart of the action, guests have a front-row view of Chef Hori-san and his team, watching each dish come to life with precision and artistry. Every course is presented personally, allowing for a rich interaction and deeper understanding of the ingredients, methods, and tradition behind each bite.
Sake & Wine Pairings
While we do not offer a set sake and wine pairing, guests may request a personalized sake and wine pairing to go along with the ever-changing Omakase. We also encourage guests to explore selections from our award-winning beverage list which showcases boutique and family-owned sake breweries.
